Instructions
  1. Measure all dry items into large bowl.
  2. Add wet items.
  3. Mix to make a batter.
  4. Ladle onto hot griddle. A drop of water should sizzle instantly when dropped on to the griddle.
  5. Cook until bubbles appear all over the surface but check for browning too. flip once and watch pancake rise. Check for browning on bottom and remove to plate when done.
  6. Serve with maple syrup & butter, or fresh fruit & sprinkle of icing sugar and cinnamon or fruit jams.
Recipe Notes

*If you do not have buttermilk, add 1 tbsp vinegar to cup, then top up with milk.  Milk will curdle after a few minutes. This works well as it imitates the effect of using buttermilk.
