Ingredients
- 1 cup all purpose flour
- 1 cup milk buttermilk is best* - adjust to desired consistency
- 1 egg beaten
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 2 tbsp sugar
- 2 tbsp baking powder

Instructions
- Measure all dry items into large bowl.
- Add wet items.
- Mix to make a batter.
- Ladle onto hot griddle. A drop of water should sizzle instantly when dropped on to the griddle.
- Cook until bubbles appear all over the surface but check for browning too. flip once and watch pancake rise. Check for browning on bottom and remove to plate when done.
- Serve with maple syrup & butter, or fresh fruit & sprinkle of icing sugar and cinnamon or fruit jams.
Recipe Notes
*If you do not have buttermilk, add 1 tbsp vinegar to cup, then top up with milk. Milk will curdle after a few minutes. This works well as it imitates the effect of using buttermilk.
